它必須使用比較高冷地區所生產的高麗菜，作出來的菜乾口感才會脆。因為天候寒冷，高麗菜就會把心包得很密，而且質地也會比較細，這樣的高麗菜口感自然不同。如果用一般的高麗菜來曬乾，口感較軟，吃不出爽脆的感覺。高麗菜乾的製作簡單，一般只要陽光充足，曬個2、3天也就可以了。
